Gourmet Cauliflower Pizza Crust

When making this crust, I prefer using a box grater to grate the Cauliflower. I find that the food processor can over process the Cauliflower leaving it mushy and watery.

  • 1 large head of organic Cauliflower

  • 8 oz of Goat Cheese

  • 2 Organic Eggs

  • 1 tsp Onion Powder

  • 1 tsp Garlic Powder

  • 2 tsp dried Oregano

  • 2 tsp dried Basil

  • 1 tsp Pink Himalayan Salt

  • 6-8 Tbls Organic Pizza Sauce

  • 2 cups Organic Mozzarella Cheese

  • Toppings of your choice: Mushrooms, Olives, Spinach, Peppers, Onions, Zucchini, Garlic, etc



  • STEP 1 - Preheat oven to 400º

  • STEP 2 - In a large bowl, grate one large head of cauliflower using a box grater. This takes a little more time, but the end result is a better crust. 

  • STEP 3 - Add the goat cheese, eggs, onion, garlic, oregano, basil, and salt to the grated cauliflower. Mix together well until it is all incorporated. This may take a few minutes.

  • STEP 4 - Line a jelly roll pan with parchment paper. Place the cauliflower mixture on top of the paper. Begin to spread it out with a spatula. Take a second sheet of parchment paper and place it on top. Now you can smooth out the crust to the desired thickness, about 1/3 of an inch thick. 

  • STEP 5 - Remove the top piece of parchment paper and form an edge around the crust with your fingers. 

  • STEP 6 - Place in oven for 20-30 minutes until the crust begins to turn golden brown and the edges start to get dark. 

  • STEP 7 - Pull out of the oven and top with your favorites organic pizza sauce, mozzarella and your favorite toppings. 

  • STEP 8 - Place back in the oven and cook for approx. 15-20 minutes until the cheese is melted and golden brown.

  • STEP 9 - Let set for a few minutes before cutting.
