When making this crust, I prefer using a box grater to grate the Cauliflower. I find that the food processor can over process the Cauliflower leaving it mushy and watery.
1 large head of organic Cauliflower
8 oz of Goat Cheese
2 Organic Eggs
1 tsp Onion Powder
1 tsp Garlic Powder
2 tsp dried Oregano
2 tsp dried Basil
1 tsp Pink Himalayan Salt
6-8 Tbls Organic Pizza Sauce
2 cups Organic Mozzarella Cheese
Toppings of your choice: Mushrooms, Olives, Spinach, Peppers, Onions, Zucchini, Garlic, etc
STEP 1 - Preheat oven to 400º
STEP 2 - In a large bowl, grate one large head of cauliflower using a box grater. This takes a little more time, but the end result is a better crust.
STEP 3 - Add the goat cheese, eggs, onion, garlic, oregano, basil, and salt to the grated cauliflower. Mix together well until it is all incorporated. This may take a few minutes.
STEP 4 - Line a jelly roll pan with parchment paper. Place the cauliflower mixture on top of the paper. Begin to spread it out with a spatula. Take a second sheet of parchment paper and place it on top. Now you can smooth out the crust to the desired thickness, about 1/3 of an inch thick.
STEP 5 - Remove the top piece of parchment paper and form an edge around the crust with your fingers.
STEP 6 - Place in oven for 20-30 minutes until the crust begins to turn golden brown and the edges start to get dark.
STEP 7 - Pull out of the oven and top with your favorites organic pizza sauce, mozzarella and your favorite toppings.
STEP 8 - Place back in the oven and cook for approx. 15-20 minutes until the cheese is melted and golden brown.
STEP 9 - Let set for a few minutes before cutting.
